Spring Greens

St. Columba's Broth - Pick young stinging nettles before the end of June, when they are 4 or 5 inches high - one 'handful' for each person. Boil, drain, chop and return to pan with water and milk. Reheat, sprinkle in fine oatmeal or oats, stirring until thick.

Nettles? I always thought of nettles as being just a weed.Do you eat nettles? How do you eat nettles?

I've now added a recipe, but I usually just make my porridge and then stir in the chopped nettles at the last minute. As soon as they hit the heated gruel they lose their sting. I also put them in potato soup.

Nettle tea is also very good. Pour boiling water on dried nettles and let steep. It's delicious and full of nourishment - iron, calcium, magnesium, potassium and zinc, Vitamins A,B,C & D to name a few.

From what I've read you should harvest before the flowers emerge.
